Ingredients:
Wet ingredients
4 pink lady apples (peeled, chopped and simmered for 10-15 mins - once the apple are soft, whizz up to make a purree)
100g Buckwheat flour
100g Ground almonds
30g Milled flaxseeds
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp all-spice
Dry ingredients:
2 tbsp maple syrup
1 large egg or 2 small eggs
50 ml melted coconut oil
75g raisins or sultanas (Optional)
Method:
Pop the oven onto 170 fan
Line a loaf tin
Put all dry ingredients into a mixing bowl
Add wet ingredients to the bowl
Mix well
Pour into loaf tin
Put into the oven for 30 minutes
Take out and cover with foil, then pop back into the oven for another 30-40 mins until cooked.
Remove from the over and leave to cool
Slice and enjoy with your favourite tea
